Teens Cook: Make My May
Join Teen Librarian, Susan, in the kitchen making recipes the May way! The nice weather has finally come, so recipes that are quick and easy to help get us outside faster are the way to go. We'll be dishing up: 10-Minute Gluten-Free Microwave Enchiladas, Homemade Single-Serve Macaroni and Cheese in a Mug, and Coffee Mug Cake.
The list of ingredients is below.
Open to teens entering grades 6-12. This is an online event via Zoom. An invite will be sent at least an hour prior to the start of the program to the email given at registration. Be sure to check your spam box if the invite does not appear in your inbox.
INGREDIENTS:
10-Minute Gluten-Free Microwave Enchiladas
1 (15 oz) can gluten-free (or regular) enchilada sauce or homemade enchilada sauce
12 gluten-free (or regular) corn tortillas
2 cups cooked & shredded chicken
1 cup shredded cheese, shredded (Cheddar, Monterey Jack, Colby)
Optional: cilantro, beans, corn, or any of your other favorite fillings
Homemade Single-Serve Macaroni and Cheese in a Mug
1/3 cup Whole grain elbow macaroni, gluten-free elbow macaroni or regular elbow macaroni
1/3 and ¼ cup Water
1/3 cup Cheddar-Jack Shredded Cheese
Splash of milk or milk alterntive
Coffee Mug Cake
3 tbsp white (or gluten-free flour or almond flour)
1/4 tsp baking powder
1/16 tsp salt
1 tbsp sugar
1 egg (or 1 tbsp + 2 tsp water)
2 tsp vegetable/canola oil, or softened butter, or applesauce
1/4 tsp vanilla extract
For the Streusel: (If you like a lot of streusel feel: free to double all ingredients below.)
1/8 tsp cinnamon
1 1/4 tsp brown sugar
1/4 to 1/2 tsp vegetable/canola oil, or softened butter, or applesauce
tiny pinch salt
2 pecan or walnut halves chopped
