Teens Cook: Spring Family Dinner

Join Teen Librarian, Susan, in the kitchen making recipes for a Spring Family Dinner.  We will be hopping into spring with some veggie recipes perfect for the whole family:  Ravioli Lasagna, a Side Caesar Salad, and Carrot Cake.

The list of ingredients is below. 

Open to teens entering grades 6-12. This is an online event via Zoom. An invite will be sent at least an hour prior to the start of the program to the email given at registration. Be sure to check your spam box if the invite does not appear in your inbox.



Ravioli Lasagna                                                                                  
1  (26 oz) jar pasta sauce
2  (30 oz) bags frozen large cheese ravioli, unthawed 
1  (10 oz) box frozen chopped spinach, thawed and squeezed of excess water OR 1 pkg. fresh baby spinach
1  (8 oz) bag shredded mozzarella cheese
1/2 cup grated Parmesan cheese 

Side Caesar Salad                                                                             
1 head romaine lettuce
1/4 cup grated Parmesan cheese
1 cup croutons
fresh ground black pepper

1/2 cup olive oil
1/4 cup mayonnaise
1/4 cup grated Parmesan cheese  
1/2 tsp mustard (dry or Dijon-style)  
2 tsp lemon juice
2 tsp Worcestershire sauce
2 TB red wine vinegar
1 tsp minced garlic
dash salt & pepper


Carrot Cake (NOTE: serving for 1)
2 TB butter or margarine
1 egg yolk
1 TB milk or milk alternative
1 tsp vanilla extract
1/4 cup flour
2 TB sugar
1/2 tsp baking powder
1/2 tsp cinnamon
1 TB shredded carrot
1 TB walnuts, chopped

1 TB cream cheese, softened
1 tsp powdered sugar
1 tsp milk or milk alternative
